
Chimay Rouge
Chimay Rouge (also know as Première or Red) is a Trappist brewed Belgian Dubbel, 7% ABV.
The beer pours with a cloudy, slightly muddy reddish brown color and a good off white head to start. The aroma brings in a complex assortment of plum, cherry, fig, some sweet pear and apple and a hint of generic nuttiness. Just as it should this beer is highlighted by rich malts, a vibrant amount of carbonation and a flavorful yeast strain. I’m tasting clove, a bit of figs and plums, a little banana, and a dry and spicy yeast finish. The carbonation is bright and dancing on the tongue enhancing the overall flavor of the beer. Complex yet still simple and pure, the flavors increase and develop as the beer warms.
